for stinabambina

coconut milk pancakes

ingredients

1 can of coconut milk
2 eggs
3 cups flour (any kind, i like to mix white and spelt or some kind of really coarse dark yum)
3 Tbsp baking powder
1 tsp salt
3 Tbsp melted butter (trust me, you need that much)

directions

1- mix dry ingredients well

2- mix wet ingredients in a seperate bowl

3- mix 'em all together

4- add water until you get the consistency you like ( i usually fill the empty coconut milk can with water for a good ladeling consistency

5- cook. if you've added all the butter, you won't need to grease the pan at all.

6- eat with kefir cheese and maple syrup. yum. or smother with yogurt and fruit. yum. yum.

p.s. the idea of a seedling play date makes me laugh really hard, which i always appreciate doing. if i lived close enough, we could have plant parties. sigh. you'll just have to start having them without me. :)
